Busy doing nothing.

On second thoughts perhaps it was something. The sky was blue, the sun shone and 2 loads of laundry dried outside.
I went through the fridge to make a shopping list, it is empty, no shopping required yet.
I did find half a cauliflower that needed using and then there was the posh Stilton, very little was eaten over Christmas.
Hmm Use it or Lose it.
I cooked the cauli florets for about 4 minutes and plunged them into very cold water, then cooked about a cup of penne pasta and dunked that in cold water also. I did the same with some Edamame beans (aka soya) and some petit pois. A pint or so of Stilton cheese sauce made and then poured over the above drained pasta and veg.
Into 2 dishes and a sprinkle of dried breadcrumbs mixed with some grated cheddar. One into the oven for dinner and one into the freezer.

I also found half of a Butternut Squash along with 2 small carrots, 1/4 of a swede, a small parsnip and an onion. All peeled and diced and into a pan with some coconut oil and sweated for about 5 minutes. Throw in a tsp each of mustard seeds, cumin seeds and medium curry powder and a good pinch each of salt and pepper, stir it up and cook for another minute or 2. Tip in a tin of chopped tomatoes and a good handful of puy lentils then pour in 500 ml of veg stock, stir,bring to the boil and then simmer till it is all cooked. Then I drained and rinsed a tin of chickpeas and stirred them in, at this point I would normally simmer to heat the chickpeas through. This time though I was cooking for tomorrow so I plunged the pan into a sink of cold water to cool it down. It is now sitting in the fridge ready to be reheated for a lazy meal for 2, and left overs.

Oh and by the way, about my moan about head over heel yarn and my thought that needle choice may have an effect. I cast on the second sock and used a different circular, win win. I used  a knit Pro rather than a Hiya Hiya and my problems were as mist on a sunny morning. I am now about to finish the heel flap and there were no bad words.

As usual Ben enjoyed his walks in the sun even though the first one was rather cold.

PS. Does anyone else rub the soft skin off chickpeas, a tedious job but I think that it it improves the texture. That's what the "food Buffs" call mouth feel.

  1. It was a lovely day for drying clothes outside, I washed our thick jumpers and they're ready to put away already!

    I also used up a cauliflower we didn't eat over the Christmas period. And yes I do take the skin off chickpeas!

  2. You've accomplished a lot today. I often feel as if I've had a lazy day but when I think about it I've usually done a whole long list of chores but because they're everyday things they merge into the background. I've also been using up odds and ends of food; I'm trying to have a few days of veg based meals as we've eaten so much meat over the holiday period. I eat chickpeas as they are, the skin doesn't bother me and its extra roughage. I hope you're feeling okay, don't overdo it. Love, Helen xx

    I very rarely use chickpeas as I'm not fond of them. When I have though I haven't rubbed the skin off-x-

  4. I like garbanzo beans the way they are. I'm finally getting used to Hummus. Love the one that's got roasted red peppers mixed with it. Not a fan of green peas, fresh or dried. I love yellow dried peas and when I've got a hambone I throw it in the slow cooker with a bay leaf and water for 2 hours, strip the bone, add in carrots and celery and a little dried onion, with the peas and cook it till the spoon stands. Guess I'll have to buy a small ham, make some scalloped potatos with cheese and I'll have a ham bone.

  6. I pick any loose skins off chickpeas as otherwise I choke on them! Knit Pro needles are worth their very high cost-I knitted a fine shawl and not one snag was seen. I also love the feel of them in my hands. Catriona

  7. What great meals found from leftovers in the fridge. Always amazing what you can make out of what seems so little. Loved what you did with the cauli, I have written it down.

  8. You amaze me putting meals together and even a couple extra meals. I would still be standing there staring at that half a cauliflower. I need to go find something to cook for tonight and have no idea what it will be. :)

  9. I vote for the knit pro too. I'm going to be cooking fridge leftovers today. I strongly suspect huge vats of soup will be on the go. Some I'll thicken into ribstickers with lentils and pulses!
